Authentic Sabatier Forged Knives, Made in France from Carbon Steel. These knives are not stainless and will rust if left wet. The entire knife is forged from a single mass of carbon steel, with a Rockwell 54-56 HRC tempered blade that is ground and polished for superior cutting power, hardness, and balance.

The handles are made from POM and are hand-set with three through rivets on the tang. From forging to packaging, all operations are carried out in the Thiers region of France by skilled craftsmen to ensure a professional quality finish.

Carbon steel knives offer exceptional cutting power, but they require special maintenance. When using or washing your knife, be sure to dry it carefully to prevent rust. Never put carbon steel knives in the dishwasher, as this can cause damage. It's normal for the steel to change color with use.
